Every Latin American family has an arroz con pollo, and every family knows whose is best. The gap between the dish in general and *her* dish in particular — that gap is sofrito, and it was never written down.

Where this dish comes from

From Puerto Rico to Peru, Cuba to Colombia, arroz con pollo is the weeknight-and-Sunday shape-shifter: chicken seasoned and seared, rice toasted in the drippings, everything simmered gold with sofrito and achiote or sazón.

The pan-Latin frame here is deliberate — the recipe's soul is regional and personal, and the point of this template is to interview it out of your own family.

Ingredients

  • 2 lbs chicken thighs, bone-in
  • 1 tbsp adobo seasoning or salt-pepper-garlic-oregano
  • 2 tbsp oil, plus 1 tsp achiote (annatto) if your family colors with it
  • 1/2 cup sofrito (onion, pepper, garlic, cilantro/culantro blended — or the frozen family jar)
  • 1 packet sazón, if that's your house
  • 2 cups medium-grain rice
  • 3 cups chicken broth
  • 1/2 cup tomato sauce
  • 1/2 cup olives, capers, or peas — house rules

The method

  1. Step 1: Season the chicken generously and brown it well in oil (bloomed with achiote if using). Remove and set aside.

  2. Step 2: In the drippings, cook the sofrito until the kitchen announces dinner — 3 or 4 minutes.

  3. Step 3: Stir in the rice and toast until the grains turn pearly and pick up color.

  4. Step 4: Add broth, tomato sauce, sazón, and your family's chosen extras. Nestle the chicken back in.

  5. Step 5: Boil until the liquid drops level with the rice, then cover tight and drop the heat to its lowest for 25 minutes. No peeking; the steam is the cook.

  6. Step 6: Rest 10 minutes, then fluff around the chicken. If a golden crust formed at the bottom — pegao, concón, cucayo, depending on your family's flag — serve it to the guest of honor.

Family notes ✎

  • The frozen jar of homemade sofrito is one of the great diaspora technologies. If your family keeps one, the ratio inside that jar is a heritage document.
  • The crispy bottom rice has a different name in every country and the same fan club in all of them.

Substitutions

  • No achiote? Sazón with color covers it; a pinch of turmeric fakes it politely.
  • Long-grain rice works — reduce broth slightly and expect a looser pot.
