Chapman (Non-Alcoholic Version)
Chapman is the drink Nigerian lounges made famous — fizzy, red, bittersweet, garnished with cucumber and citrus. The original includes spirits; this family-style non-alcoholic version keeps the color and ceremony so children, drivers, and teetotalers at Nigerian-American parties get the same glass.

Where this dish comes from
Chapman's origin is debated — hotel bars in Lagos popularized it by the 1980s. The classic builds on Fanta Orange, Sprite, Angostura bitters, grenadine, and cucumber. Original recipes often include vodka, gin, or both.
Original alcoholic Chapman: add 1 oz (30 ml) each vodka and gin per serving, or rum alone — bars rarely agree. This template preserves the structure; your family's bar version should be recorded separately if spirits are part of your tradition.
Ingredients
- 2 cups (480 ml) Fanta Orange or orange soda
- 1 cup (240 ml) Sprite or lemon-lime soda
- 2 tbsp (30 ml) grenadine syrup
- 2 dashes Angostura bitters
- 1/4 cup (60 ml) fresh orange juice
- 1/4 cup (60 ml) fresh lemon juice
- Ice cubes
- 1/2 cucumber, thinly sliced
- 1 orange and 1 lemon, sliced for garnish
- Maraschino cherries (optional)
The method
Step 1: Fill four large glasses with ice. Add a few cucumber slices and a citrus slice to each.
Step 2: Mix Fanta, Sprite, orange juice, and lemon juice in a pitcher. Stir gently.
Step 3: Add grenadine and Angostura bitters. Stir once — the color should turn sunset red.
Step 4: Pour into prepared glasses. Top with extra soda if needed for fizz.
Step 5: Garnish with cucumber, citrus, and a cherry if using. Serve with a straw.
Step 6: For the original alcoholic version: add 1 oz (30 ml) vodka and 1 oz (30 ml) gin per glass before garnishing — or ask your family's preferred spirit ratio.
Family notes ✎
- Some diaspora parties use Ting or Fanta Pineapple instead of orange soda — document your swap.
- Bitters are non-negotiable in most Nigerian Chapman recipes; amount varies from 1 dash (mild) to 4 (bar strength).
Substitutions
- Club soda plus orange juice can replace Fanta for less sweetness.
- Non-alcoholic bitters or a pinch of spice blend if Angostura is unavailable — note the change.
