Where this dish comes from

Pepper soup — goat, catfish, chicken — is one of Nigeria's most shared dishes across ethnic lines. Goat pepper soup anchors naming ceremonies, postpartum meals, late-night party recovery, and rainy-season comfort.

The signature is ehuru (calabash nutmeg) and a blend of uda, uziza, or commercial pepper soup spice. Diaspora cooks lean on spice packets from African markets while elders insist on grinding whole spices — both paths are documented here.

Ingredients

Soup base

  • 2 lbs (900 g) bone-in goat meat, cut into pieces
  • 8 cups (1.9 L) water
  • 2 seasoning cubes
  • 1 tbsp (8 g) ground crayfish (optional)
  • 1 tsp salt, plus more to taste

Pepper soup spice

  • 2 tbsp (14 g) Nigerian pepper soup spice blend (or 1 tsp each ground ehuru, uda, and uziza seed)
  • 2 scotch bonnet peppers, pierced whole
  • 1 medium onion, quartered
  • 4 cloves garlic, crushed
  • 1 tbsp (6 g) grated fresh ginger
  • 2 scent leaves (nchanwu) or 4 basil leaves

The method

  1. Step 1: Put goat, water, seasoning cubes, and salt in a pot. Bring to a boil, skim foam, then simmer partly covered until the meat is tender — 1 to 1 1/4 hours.

  2. Step 2: Add pepper soup spice, whole scotch bonnets, onion, garlic, ginger, and crayfish if using. Simmer uncovered 20 minutes until the broth is fragrant and lightly thickened from the meat alone.

  3. Step 3: Adjust salt. The soup should be thin, peppery, and aromatic — not reduced to stew.

  4. Step 4: Add scent leaves or basil in the last 2 minutes. Remove scotch bonnets if your guests prefer mercy.

  5. Step 5: Serve hot in bowls. Traditionally eaten with agidi (corn pudding), boiled yam, or drunk plain as restorative broth.

Family notes ✎

  • Igbo pepper soup often runs heavier on uziza and utazi leaves; Yoruba versions may add more ginger. Rivers State cooks sometimes float extra fresh pepper at the end.
  • For new mothers, families reduce scotch bonnet heat but never reduce ehuru — ask what your lineage does.

Substitutions

  • Pepper soup spice packets (such as Knorr or local market blends) — use 2 tbsp and taste before adding more ehuru.
  • Beef or oxtail pepper soup follows identical spice logic.
